Cauliflower and bajre (pearl millet) ki roti

Welcome on my blog Khaana Khazana Tasty. Today I am going to make Cauliflower and bajre (pearl millet) ki roti. Pearl millet is rich in fibre, protien and essential minerals. Bajra flour is a healthy gluten free alternative to wheat flour. Bajre roti is a traditional Rajastahni dish but it is very popular in North India. The delicious Bajre roti is a store house of nutrition. Health benefits of bajre includes improved digestion and weight loss. When grated cauliflower is mixed with Bajre roti, it further enhances its taste and nutritional level
So let us start the recipe.
Course - main
Cuisine - North India
Preparation time - 10 min
Cooking time - 10 min
Ingredients -
Bajra flour = 150 gm
Cauliflower - 100 gm
Onion leaves = 100 gm
Ginger = small piece
Garlic = 6 cloves
Chillies =2
Coriander leaves - few
Salt = 1/2 teaspoon
Method of preparation -
1.Grate cauliflower and cut onion leaves and coriander leaves in very small pieces.
2.Make a paste of ginger, garlic and green chillies.
3.Mix grated cauliflower, chopped onion leaves, paste of ginger garlic, coriander leaves and salt.
4.Add sufficient water to make a dough of bajra.
5.Make a soft dough.
6.Heat tawa on medium flame.
7.Make balls of dough.
8.Roll a ball on rolling board by adding extra dry flour and make a circular roti of desired size.
9.Transfer the roti on hot tawa and roast from both sides.
10.Transfer the roti on fire and bake from both sides till it becomes crispy.
11.Add ghee on hot roti and serve hot with sabzi and chutney.
Things to remember -
1.The flour of bajra should be fresh otherwise roti will crack while rolling and cooking.
2.Chopped onion can be used for taste.
3.Spices like asafoetida (hing), garam masala can be used.
